• 1 large red onion (finely chopped)
  • 2 cloves of garlic
  • 500g beef mince
  • 1 small red capsicum (finely chopped)
  • 125g canned corn kernels (drained)
  • 2tsp mexican chilli
  • 2tbsp taco seasoning
  • 1 can diced tomatoes
  • 4 tortillas
  • 250g cheese (grated)
  • 1 large tomato for salsa (finely chopped)


    1. Preheat oven to 180ÂșC. Set aside 2 tablespoons of onion for the salsa, add garlic and remaining onion to the pan and cook until softened.

    2. Add mince and cook until brown, breaking up with a woooden spoon.

    3. Add capsicum, corn, chilli powder and taco seasoning. Cook, stirring for 3 minutes or until capsicum is softened. Stir in diced tomatoes.

    4. Simmer for 5 minutes or until mixture thickens. Season with salt and pepper, then set aside and cool for approximately 10 minutes.

    5. Place one tortilla in the bottom of the pan and top with mince mixture, then cheese. Repeat this process using all mince over 3 layers then cover with last tortilla and top with cheese.

    6. Bake for 15 minutes until cheese is golden. Combine chopped tomato and reserved onion and serve with pie.
