Tasty Chicken Quesadilla

  • 400g chicken breast
  • 250g mushrooms (sliced thinly)
  • ½ packet of taco seasoning
  • 300ml sour cream
  • 8 large tortilla wraps
  • 1 small onion (diced)
  • 2 cups of cheese (grated)
  • 1 jar of mild salsa
  • Barbeque sauce
  • Shallots or chives (chopped)
  • Milk (or water)


    1. Cook chicken whole in a pan on low heat. Be sure not to overcook.

    2. Whilst chicken is cooking, combine the half packet of taco seasoning with half of the sour cream (150ml). Mix well and set aside.

    3. Mix the other half of sour cream with a little milk (or water) to the consistency of yogurt. Put this mix in a piping bag (or use a plastic bag with the corner cut off). You’ll want the hole to be pretty small.

    4. Once chicken is cooked through, dice into approximately 1cm pieces.

    5. Place a tortilla wrap on a clean surface and spread evenly with some of the seasoned sour cream mixture.

    6. Cover one half of the wrap with chicken, mushroom, onion and cheese. Then fold the other side over the top, place in large sandwich press and cook until slightly browned and cheese is melted.

    7. Remove from sandwich press, slice into four pieces and drizzle with thinned sour cream and barbeque sauce. Add some salsa and shallots (or chives) and serve.
